IRELAND’S FIRST NATURAL WINE BAR

I strive to source wines that have minimal impact on the planet, and support the small-scale farmers. The wines I serve are generally vegan, with little or no added sulphites and fermented using naturally occurring yeasts. The grapes are all organic, biodynamic or just grow wild. I tend to change up my wines depending on what’s available as some of the producers I work with only make tiny amounts, as in 600 bottles!

BUBBLES

Masot, Vino Frizzante Colfondo, Treviso DOC, Veneto, Italy 2021 42
Vegan, Natural, hand harvest, unfiltered, low intervention
Glera grapes with aromas ofg ripe stone fruits and hints of brioche. On the palate, layers of flavour unfold, showcasing orchard fruits, almonds, and a distinct minerality. Masot is a small wine house from Sarmede, north of Conegliano between the hills and the foothills of the Alps.


ORANGE

Ino es Pituko, Echeverría Winery, Curicó Valley, Chile 42 / 9
Vegan, Natural, hand harvest, unfiltered, low intervention
This Chilean orange, is made from single vineyard, old-vine sauvignon blanc left on the skins for 60 days and bottled unfiltered with no sulphur added. On the palate, you’ll detect smoky stone fruit and citrus with savoury wild herbs and a nice grip.

Château de Cranne, Right bank Bordeaux. Vincent Lacoste 42

Côtes-de-Bordeaux is the youngest AOC appellation in Bordeaux. This right bank by Vincent Lacoste has aromas of yellow fruits and flowers, as well as a refreshing acidity and balanced tannic texture derived from its prolonged maceration of the skins and seeds, this is a gentle introduction to the world of orange wines!


ROSÉ

Organic principles
A Primitivo rosé that fully expresses the character of the Mediterranean with fragrant notes. And with its fresh and pleasant taste, it captures one from the very first sip.

Bodegas Antonio Arraez, Cannallas Rosado, Valencia, Spain 38 / 8.5

Delicate rosé colour in the glass. Intense fruit aromas of raspberries and strawberries with floral nuances. Fruity and balanced on the palate with good structure. Fresh and elegant finish. Dry.


WHITE WINES

Chateux Farizeau, Entre-deaux-Mers, France 42
Vegan, Organic
Sauvignon Blanc, Semiilon, Muscadelle. Fresh, bright fruit over clean rocks and grass. The zing of the SB and the breadth of the Semillon are nicely balanced. Round, long fruity finish. A great intro to white Bordeaux.

Organic principles
Mauzac, Loin de L-oeil offer honey, candied fruits, gingerbread…a delicious, sweeter wine from the Gaillac wine making region.

Les Athletes Du Vin, Loire Valley 42

Hand-picked harvest. A Chardonnay with aromas of white fruit, fruity and floral. A beautiful and lively mineral feeling spreads throughout the mouth. The finish also has a hint of anise.

Funkstille, Niederösterreich, Austria 42

Gorgeous flavours of exotic fruits, melon and grapefruit, with ripe orchard fruits, pear and apple with a fresh and zingy citrus backbone. A dry Grüner Vetliner, textured and complex the palate is balanced between freshness and richness.

Domaine Jean Pascal Aubron, Loire Valley

This gorgeous Sauvignon Blanc comes from 40+ year old vines grown on gabbro and volcanic soils, fermented in stainless, unfined, lightly filtered and lightly sulfured. The result is mouth-wateringly refreshing and easy to drink.

Les Athletes du vin is a complex and zesty aromatic Chenin Blanc wine from Touraine, known for its fruity and white flower notes. This wine can accompany a wide range of dishes, from aperitifs to cheese platters, due to its versatility.

João Pato Aka Duckman Quaaaq Quaaaq, Bairrada Portugal 42

Fermented without skin in used oak and chestnut casks. Aged for 6 months in barrels and stainless steel (50/50) without sulphur. It is bottled unfiltered, without collage and without sulphur.

The Bical grapes are harvested by hand. No stabilization or filters used. Limited, small production.

Bouquet of white fruits, a round lightly floral wine with a fullness and spice. Pinot Grigio grapes are hand-harvested from our hillside vineyards in the Abruzzo region to create this quintessential Italian white wine. The delicate whole berry pressing enhances the primary fruit flavors to provide a succulent refreshing wine with delicate floral notes.

This Malvasia is naturally slightly sparkling, intense & fruity with pleasant soft white fruits & crunchy fresh finish. It’s a naturally carbonated wine which dances on the tongue, a real refreshing aperitif!

Chateau Ka Source Blanche Bekaa Valley, Lebanon 52
This amazing blend of Sauvignon Blanc, Chardonnay, Muscat and Viognier grape varieties creates this exceptionally satisfying wine. Floral and citrusy with great depth of character.

Ondalán, Rioja DO, Spain 38
Sustainable
Interesting white Rioja. High aromatic intensity. Tropical fruits and aroma of white flowers. Second layer with notes of anise. The wine has a pleasant freshness, long and voluminous in the mouth. A beautiful wine for a cheeseboard.

Poggio delle Baccanti Campania 38

Greco grapes offer pale straw yellow with golden reflections, notes of aromatic herbs, ripe fruit, and white flowers. Medium-bodied and dry, mineral-driven with notes of fresh herbs and lemon citrus, ripe stone fruit, and flowers.

Sweet Pinot Gris which is lightly textured, presenting pleasant acidity and luscious fruit.

Foral, mineral, chalky and fruity bouquet (coin, plum and citrus). The dense mouth is balanced by a beautiful freshness and persists for a long time on saline notes.

Dominique Belluard ‘Le Feu’ Cépage Gringet 2016 Vin de Savoie 120

Floral, chalky and mineral aromatic bouquet. Quince and plum. The mouth reveals a dense material balanced by a great freshness that translates into menthol and liquorice touches as well as a somewhat saline finish.



RED WINES

Vegan, Organic (certified by agroVet, and also produce their own fertiliser)

Zweigelt grapes comprise this medium-bodied and exceptionally smooth wine that shows abundant red cherry, plum and vibrant berry fruits. A joyful, bright and incredibly juicy red; with beautifully ripe and light tannins and touch of spice on the finish.

Chateau Ka Source de Rouge, Bekaa Valley, Lebanon 52
A blend of Cabernet Sauvignon, Merlot and Syrah which gives the wine a delicate bouquet of red fruits and subtle spice whilst red pepper and soft tannins fill the palate with hints of liquorice.

100% Aglianico grapes farmed organically on volcanic soil near mount Vesuvius. Medium-body red wine, ridiculously balanced, nice tannins, black fruit, and tobacco leaf.

Corvina, Rondinella, Corvione, Molinara. A deliciously modern organic expression of Valpolicella, super fragrant and full of fine, fine tannins. Delightful, easy drinking and one of my current faves! (currently out of stock)

Trolling grapes bursting with strawberry, raspberry, and cherry dominating the nose, with a hint of rhubarb. A mild fruit sweetness buffers the fine acidity on the palate. A slightly aromatic spiciness complements the red fruits. In taking a step back and letting nature run its course, Leon has found his own gold. His vines are healthy and abundant: the embodiment of independent, living wines

Ondalán, Rioja Alavesa DO, Spain 38 / 8.5
Sustainable
This is a juicy and pretty Rioja that’s bright, aromatic (ripe blackberry, mocha, cinnamon, firewood) and really well balanced. A blend of 70% Tempranillo and 30% Graciano, this is the perfect Spanish sipper.
