Tom hails from Manchester and came to Ireland in 2010. His Irish roots going back to 1150AD, via Kilkenny Castle and the Butler clan. Whilst on his cycle tours, he enjoys visiting natural wineries and vineyards off the beaten track finding unique samples for lucky guests to sample - or for exclusive tasting evenings.

He takes his food and wine provenance seriously, albeit in a laid back way, and puts together small tapas dishes with an emphasis on local and seasonal producers found along the length and breadth of the Wild Atlantic Way.

He has worked as a life skills trainer and activity instructor, was a DJ on a Pirate radio and still spins vinyl in his bar.
