Whilst on cycle tours, he enjoys visiting natural wineries and vineyards off the beaten track sourcing unique samples for lucky guests to sample - or for exclusive private tastings.
He takes his food and wine provenance seriously, albeit in a laid back way, and puts together small tapas dishes with an emphasis on local and seasonal producers found along the length and breadth of the Wild Atlantic Way.
He has worked as a life skills trainer and activity instructor, was a DJ on a Pirate radio and still spins vinyl in his bar.
