IRELAND'S FIRST NATURAL WINE BAR

Any product has to be made somehow, therefore, by definition, the terms 'Planet-friendly', 'Eco-friendly', or 'Zero-Waste', are, in my opinion, misleading. Whether the by-product is human labour, or post-use recycling/waste, there is still an impact on the planet, and its resources.


The reason I chose to only stock 'natural' wines, that is to say, wines made with absolute respect for the earth, specifically the soil system, is that this is one way to reduce the strain on the earth. It is also the reason why I aim to use local and/or organic products as much as possible, good farming practices also help to fix carbon in the soil, it's a double whammy!

Ethical Local Food

I use Irish products as much as I can on my signature amazing grazing and cheeseboards, and also serve small tapas-style plates of vegan and vegetarian food. I have (as far as I know) Ireland's first Avocado-free, Palm-Oil-free, GMO-free, salmon-free menu, and aim to stock the world's most environmentally sensitive (bird-friendly) coffee, as well as being one of the first supporters of local roasting expert, Bean West.


Most of the charcuterie is local, such as McKeough's Connemara air-dried ham, as well as the cheeses, like Danny Dozio's Ella or his delicious soft cheeses, some made specifically for me. I also use some very high-end products from Greece and Italy, such as delicious organic olives, antipasti or candied cherries.

To this end, I spend a lot of time sourcing products that are made by real people, with sound ethical practices. Some of these products aid conservation, and are sourced directly from Italy or Greece, however, I aim to keep the bulk of my fare from local producers. It's really about finding the balance between business operations vs care for the planet.

Championing award-winning, artisan producers along the Wild Atlantic Way and Ireland in general. It is my ethos to support local artisan producers and help them put food on their tables, by putting it on yours! Some products come from further afield, but these are kept to a minimum and aid local conservation, like our wild-foraged mountain herbs from the Italian Alps!

The Gallery is Ireland's first Natural wine bar and puts the planet before profit as much as possible. It is the first bar in Ireland to remove avocado from the menu. (The 'Green Gold' is controlled by cartels in South America, resulting in thousands of farmers being murdered. In Chile locals are having to rely on water trucks for all their water needs and once-flowing rivers are now bone dry.
The Gallery Westport has a consciously Palm Oil, farmed Salmon, blood-avocado and GMO-free menu, to help minimise earth's impact. Please see here for further information and here, and educate yourself about some of the issues in the global food supply chain. I am learning all the time about food and its production, in particular, soil regeneration as healthy soil = healthy food!

The water for Mescan beers comes from deep underneath Croagh Patrick via a spring beside the brewery. Malts, hops and yeast for the beer come from Belgium.

All the beers are vegan-friendly.

Mescan Brewery is named after Mescan the monk who was St. Patrick's friend and personal brewer. It is situated on the slopes of Croagh Patrick and is owned and operated by Bart Adons and Cillian Ó Móráin, two Westport vets who have been friends and colleagues for nearly 20 years.
